My tipple at the moment is definitely the Bellini! It’s refreshing, a little bit sweet and perfect for special occasions. I’m not usually a consumer of alcohol (well…not since the kids arrived), so when I do decide to enjoy a drink, I like to make it a bit special. As far as cocktails go, Bellini’s are wonderfully simple to make and will make any special occasion memorable. Happy New Year 🍾
Peach Bellini
- 50 ml peach juice or purée, chilled
- 200-250 ml good quality Proseco or sparkling wine
- Ice is optional
Limone Bellini
- 30 ml (1 shot) Limoncello, chilled
- 200-250 ml good quality Proseco or sparkling wine
- Ice is optional
For the Peach Bellini, you can juice or purée fresh peaches, otherwise jar or canned peaches in their natural juice is perfectly acceptable. Whiz the peaches until the purée is smooth. Spoon some into the bottom of a champagne glass and top with Proseco or sparkling wine. I added some fresh raspberries too. In case you’re wondering what Proseco is, it’s simply sparkling wine from Italy, whereas champagne is sparkling wine from France. There are other differences, but that’s the quick definition!
For the Limone Bellini, add a shot of Limoncello (lemon liqueur) to the bottom of a champagne glass and top with Proseco or sparkling wine. Enjoy x
