A lovely friend gave my daughter a beautiful kid friendly cookbook for her birthday. It’s called The Great Fairy Bake Off (of course) and it is full of yummy sweet treats that my daughter can make. My daughter chose to make these chocolate fairy cupcakes first as she absolutely LOVES chocolate! There are fortunately other recipes in the cookbook which are not as sugar loaded, but as it is the school holidays and the weather is horrible, chocolate cupcakes sound perfect.
I was a bit skeptical that a cookbook for kids would include recipes that were very good, but these cupcakes were delicious and light and fluffy. I know they will become a regular favourite for our family.
Fairy cupcake ingredients
- 3 eggs
- 150 g (1 1/3 cups) self raising flour
- 150 g (2/3 cup) unsalted butter, softened
- 150 g (3/4 cup) caster sugar
- 3 tbsp cocoa powder
Fancy chocolate frosting
- 250 g (2 cups) icing sugar
- 125 g (1/2 cup) unsalted butter, softened
- 2 tbsp milk
- 2 tsp cocoa powder
- Mini marshmallows (for decoration)
- Chocolate buttons (for decoration)
Preheat your oven to 180 c/350 f.
In a large mixing bowl cream together the butter and sugar with a wooden spoon. Then stir through the eggs until they are thoroughly combined. Sieve the flour and cocoa and stir it through (you can use a mixer if you want to). Spoon the mixture into twelve cupcake cups (I used two heaped dessert spoons). It’s best if you place the cupcake cups or wrappers in a muffin baking tray so that they keep their shape while baking.
Bake for around 15 minutes. Remove from the oven and let them cool completely before adding the frosting.
Prepare the frosting by sieving the icing sugar and cocoa into a medium sized bowl. Add the butter and milk and combine. Use a butter knife to spread the frosting on the cupcakes. I was generous with the frosting, but this recipe does make a lot of icing for twelve cupcakes.
To decorate, break the chocolate buttons in half and arrange them on the cupcakes, then sprinkle on the mini marshmallows and finish by dusting them in icing sugar. Isabel the cupcake fairy hopes you enjoy these as much as she did.
