I do like a nice breakfast as it always seems to set how well the day will go. If I skip breakfast, I always get so drained and tired by the end of the day. So healthy nutritious banana and ricotta pancakes drizzled with honey seems like the perfect way to start a lazy Sunday morning and give me the energy I need to chase after my two boisterous little girls. They’re also super quick to whip up too.
- 1 cup self raising flour
- 1 tbsp caster sugar
- 1 cup buttermilk (if you’re not keen on the flavour of buttermilk, use normal milk instead)
- 1/2 cup ricotta cheese
- 1 egg
- 1 banana, mashed
- Honey to drizzle and extra sliced banana to add on top
In a bowl sift together the flour and sugar. In a separate bowl use a hand whisk to whisk together the buttermilk, ricotta and egg.
Gradually whisk together the ricotta mix and the flour mix and then stir through the mashed banana. The ricotta and mashed banana will make your pancake batter a bit lumpy, but it doesn’t matter.
Add some spay oil to a medium hot frying pan and add 1/4 cup of the pancake batter. Cook it for a couple of minutes until bubbles form on top. The bubbles let you know when you can flip them over to cook the other side.
Remember to re spray the frying pan before adding each 1/4 cup of batter. The batter ended up making a dozen fluffy pancakes. Add some extra sliced banana on top and drizzle on some beautifully sweet honey.
