I’m looking out my window at torrential rain and blustering winds and wondering where summer went! It was only a few days ago that we had 36C and now it feels like winter again. Though I’ll never complain about the rain, cause we desperately need more.
As I’m stuck inside, my mind has turned to baking. This cake was made at the insistence of my four year old. We have a number of over ripe bananas that needed using and my daughter always insists on adding chocolate to everything, but the only chocolate related thing in my cupboard was Nutella.
This cake is nice and easy and would be great for an after school treat for the kids. You can also just make a straight banana loaf if you don’t want to include the Nutella.
- 100g unsalted butter, or margarine
- 1/2 cup caster sugar
- 2 eggs
- 1 cup self-raising flour
- 1 cup almond meal
- 1 tspn baking powder
- 3 small or 2 medium bananas, mashed
- 2 tblsp Nutella, or similar variant (chopped chocolate pieces would also be good)
Preheat the oven to 180C. In a mixer, blend together the butter and sugar until it is light and fluffy and then add in the eggs one at a time.
Slowly add the flour, almond meal and the baking powder and combine well. Remove from the mixer and hand stir through the mashed bananas and Nutella. I didn’t over stir the Nutella so that the cake would have a nice marbled effect.
Pour the mixture into a lined loaf tin and bake for 45 minutes or until a skewer comes out clean. Let it cool in the loaf tin before upending and slicing. Yum
