While rubbing the sleep from my eyes this morning, I had the sudden urge to make waffles. It was chilly outside and I wanted something warm and sickly sweet to get me started. Miss three thought that it was a great idea and watched my every move while drinking her early morning Milo (malted chocolate milk drink).
Ingredients:
- 2 cups plain flour
- 2 tblsp caster sugar
- 1 tblsp baking powder
- 1/2 tspn baking soda
- 1/2 tspn salt
- 1 3/4 cups reduced fat milk
- 6 tblsp vegetable oil
- 2 large eggs
Place all the ingrediants in a bowl and hand whisk until smooth. You don’t need an electronic device as it’s easy and quick to mix by hand.


I have a lovely electric waffle iron which makes waffles perfectly (crunchy on the outside and fluffy in the middle). I spray it with cooking oil before I add 1/3 cup of the batter. I know that it’s non-stick, but I just don’t trust it to be non-stick enough!
After around 4 minutes, the machine beeps at me that the waffle is ready for toppings.
Miss Three and I like to have banana, strawberries and maple syrup on ours, while my husband prefers lemon juice and a sprinkle of caster sugar – though he decided that the banana also looked good.

Now I want some also. I think I’ll try your recipe and use my own waffle maker. But I have homemade fruit syrup that my grandkids and I love, and just happen to have watermelon open, so I’ll top it with that. Ate my last banana yesterday. I do have frozen peaches though, and sweet cherries in the fridge, and oh, my I’m getting ideas now. Thank you for the idea.

Delicious. Topped with a pat of butter, watermelon syrup and sweet cherries. Who could ask for more? I’m going to keep the waffle maker out so I can have them more often.
