My husband and I occasionally like to eat something a little more sophisticated than the food we normally prepare for the whole family. There’s only so much home made fish and chips, sausage rolls and spaghetti bolognese you can have before you loose the will to eat! It’s also a great recipe for a romantic dinner for two (romance…what’s that?..I have two kids under four)
Ingredients:
- 100g smoked salmon sliced
- 3 large cloves of garlic
- 1/2 red onion
- spinach leaves (2 or 3 handfuls)
- chopped parsley (1 handful)
- spaghettini (thin spaghetti) (2 serves)
- olive oil
- grated Parmesan/Romano/Pecorino cheese
- freshly ground pepper
Boil water in a large pot and sprinkle in some salt. Once the water is boiling and the spaghettini is cooking, prepare the other ingredients in a frying pan. Saute the garlic and red onion with some olive oil until translucent. Add the sliced salmon and spinach and stir until the spinach has wilted and the salmon is cooked through.


Once the spaghettini is cooked; drain and add to the frying pan. Stir through until all the ingredients are mixed and then add the fresh parsley and ground pepper and splash on some more olive oil to add gloss. Serve with grated Parmesan or similar (this is optional – apologies to the purists who will violently object to the adding of Parmesan to seafood pasta…but hey, I really like it that way!). This dish is perfectly accompanied with a glass of chilled chenin blanc.

i’m not so much fan of spinach, but i should try it without 🙂 you tried to make pizza homemade?

You could always try it with snow peas or string beans or even broccoli would do. Yes, I’ve made a homemade pizza. It’s early on in my blog. Thanks Amy
