I recently bought some cute little cookie cutters with springs, which make them perfect for toddler fun in the kitchen. My biscuit recipe is a simple butter cookie, so feel free to add sprinkles or icing to sweeten it up.
Ingredients
125g unsalted butter, room temperature
250g (1 2/3 cup) self raising flour – I usually add an extra 1/4 cup to make it less sticky
90g caster sugar
1 egg
1/2 tsp vanilla extract
Method
Crumble together the flour and butter, then add the sugar, vanilla and egg to make the dough. Too easy! I usually use two pieces of baking paper to roll out the dough, so that you can roll the dough to a consistent thickness.
Toddler fun time! I re roll the dough several times to continue punching out cookies. Depending on the size of your cookie cutters, you can make up to 60.
Bake on trays for 10-12 minutes in a 180*C/350*F oven. Let them cool before eating.
